不好意思,昨晚因为去看<inception>回家很晚,没来得及放上猪头蛋糕的recipe.
现在在公司,要行动迅速,好!!先放Chocolate mud cake的做法(我也只是按食谱抄着做的):
通常Icing cake需要比较厚重的蛋糕作为底部,否则猪头做出来成型就不够坚挺了。所以做mud cake。
Cake base - chocolate mud cake: (8寸-9寸份量)
250g butter
250g dark chocolate
2 tablespoons instant coffee powder
150g self-raising flour
150g plain flour
60g coco powder
1/2 teaspoon bicarbonate soda
400g caster sugar 糖的份量已经比原食谱减少了,如果不喜欢太甜,自己还可以适量调整。
4 eggs
2 tablespoons oil
125g butter milk. 材料全部栽Woolies or coles有卖。
步骤:
1. Preheat oven to warm 160C. Brush cake tin with melted butter or oil. Line the base and side with baking paper. make sure the paper around the side extends above the top edge.
2. Put butter, coffee and chocolate in a pan with 185ml hot water, stir over low heat until smooth. remove from heat.
3. Sift flour, cocoa and bicarbonate of soda into a large bowl. stir in sugar and make a well in the centre. add eggs, oil and butter milk. using large metal spoon stir slowly to start incorporating the dry ingredients. then gradually stir in the melted chocolate mixture from step 2.
4. Pour mixture into the cake tin and bake for 1 hour and 45 mins.时间视情况而定,可以用一小竹签或筷子插到中间,如果筷子拉出来是干的,就证明蛋糕已经熟了。
